Artichoke Pesto Chicken

               ...with roasted broccoli

Some serious food is going down in our home.  I am so thankful we tried EMEALS. (<--Click there to see what I'm talking about) Changed the way we do meals. It's been a few weeks since I made this lovely meal, but I had to post it because it's worth sharing. 

Here it goes:

Artichoke & Pesto Chicken & Roasted Broccoli

1.5+ lbs boneless, skinless chicken breasts 
1 T olive oil
14.5 oz can diced tomatoes, undrained 
1/4 c pesto sauce 
14 oz can quartered artichoke hearts, rinsed & drained


Season both sides of chicken with salt & pepper. Heat oil in large skillet over med-hi heat. Place chicken in skillet; cook turning once to brown each side. Remove chicken from pan; set aside. Pour tomatoes into pan. Cook 1 min, stirring occasionally. Stir in pesto & artichokes. Return chicken to pan. Cover; reduce heat to med. Simmer 5-10 min, or until chicken is cooked through.
(as you can see I used fresh diced cherry tomatoes, way better in my opinion & we served this meal over pasta)
Fresh Head of Broccoli, trimmed & cut into spears (or one pack of frozen spears)
3 T Olive Oil

Preheat oven to 400 ̊. In large bowl, toss broccoli, oil, salt & pepper together. Place broccoli on baking sheet in single layer. Bake 20 min, until tender & browned.
I have to say I've never had broccoli this way. And...I don't think I could eat it any other way after this. If you've never had it this way, you are missing out.

kids greek yogurt


Hey =)

So, we've been suffering with this crazy head cold for almost a week now, and I'm really ready to be normal again. I like to breath. Thankful that the Hubbs didn't get it. The kids are kinda normal, even with it. I think they are way too distracted. Me? I'm a mess. Haha. I seriously think my brain is filled with mucous. You know that feeling? Seriously where does it come from? Ya, I'm convinced. Haha!

Recently I've tried two Greek Yogurts for Kids with our daughter. I love how they are less on the sugar and more on the protein. Anyways I wanted to do a little comparison for my bloggers. That's kinda fun right? Hopefully you can read the photo. 
The one on the left is the Stonyfield (ORGANIC) Yo Kids GREEK (strawberry) and the one on the right is the CHOBANI CHAMPIONS (very berry). 

I tried to get similar flavors as well. This was the closest I could get. 
Here's the run Down:


Calories: 100 (per 106g)
Fat: 1g
Sugar: 16g
Salt: 90mg
Protein: 6g
Calcium: 20% DV

Other Positive things about it: Includes Beet Juice, is Organic, cheaper for the most part.

Sugar: 11g
Salt: 40mg
Protein: 8g
Calcium: 10% DV

Other Positive things about it: Fun 3D game for your iphone with each lid, they have a chocolate flavor (have to try it!), uses Evaporated Cane Sugar.



The prices depend on where you get them. But I noticed the Stonyfield brand was 25 cents cheaper. Something to think about.

So if you have kids, or enjoy a yummy Greek Yogurt maybe this will help you the next time you shop. I try to shop smart. And it's fun to compare products beyond prices. Right? Enjoy!

pros and cons.

Hi! 

Less than a week from Valentine's Day. As much as I love the holiday I think I like the colors and food that goes with it the most. And the excuse to go out with the hubbs. Our kids aren't at an age that really understand holidays and what they are all about. Our oldest Ashlyn, two and a half, doesn't know one day to the next. She just knows some days we go out or have people over, and others we just stay home and do the household stuff. So with that said I've been trying to find the perfect Valentine's Gift for A's sunday school friends. I think I found the perfect one. Just got to get on making them, since we'll be passing them out sunday. Yikes! And yes I will blog about that. Wish I did it well in advance so I can show ya'll, but it'll be on here for next year I suppose. ;)

So for now I'll post a few things with their pros and cons.

So to begin...

Extreme Pita. 


Pro: I got the Thai Chicken Pita. It was filled with lots of veggies and chicken. I felt like it was healthy. The pita was super soft and seriously could have just eaten it alone.

Con: The only negative would be it fell apart half way through eating, but I guess if I ate the pita with the wrap on it would stay together much better. Needless to say it was worth the mess.

I started doing Ashlyn's hair on a daily basis. Her hair is at the perfect length for playing with. I'm SUPER happy about that!

 Pro: I've got the one braid down.


Con I need to work on the two :-/ Notice the burettes holding the hair in place. But we're getting there...




 Two frozen Burritos to the test:


GOOD FOOD MADE SIMPLE

Pro: Best tasting Burrito I've EVER eaten, frozen or not. The shell was naturally soft and not hard to cut  through with a fork. You can buy this at Market Basket. A HUGE plus.
Con: Didn't seem to have any eggs, but mainly potatoes and cheese. I know they were in there somewhere. haha.

 EVOL.

Pros: Healthy and tasted really good. Also it was very filling, but it was one of the largest frozen burritos I've eaten. Also found at Market Basket. (I did eat it with some salsa.)
Cons: High calories. But what could I expect. Right?


Oh and I mentioned in a tweet that we were having trouble with out latest iphone app for budgeting. We have switched from Toshl to EEBA (via) This is anther {free} app. hopefully EEBA does a better job keeping our budget on track. 


Brr...I gatta go warm up in a blanket.
